Makes 16-18
3 cups oats
1 1/2 cups brown rice flour
1 cup raisins
1 cup chopped nuts of your choice)
4 Tbsp. olive oil
1 Tbsp. apple juice concentrate (I used fresh apple juice that I made with my Champion)
Apple juice to mix
Agave nectar to taste
Preheat oven to 375.
Mix all ingredients together, using just enough apple juice to make a mixture with a soft "dropping" consistency.
Divide mixture into flattened cookie shapes and place on oiled baking sheets.
Bake for about 20 minutes, or until golden. Place on wire rack to cool.
